Ingredients:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, melted and cooled
2 large eggs
1/2 cup plain Greek yogurt
1/4 cup milk
1 teaspoon vanilla extract
1 cup shelled pistachios, finely chopped
1 cup white chocolate chips, melted
Directions:
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
In another bowl, combine the melted butter, eggs, Greek yogurt, milk, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chopped pistachios.
Divide the batter evenly among the muffin cups.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Drizzle the melted white chocolate over the cooled muffins and sprinkle with additional chopped pistachios if desired.
